Designing a scientific approach to baking

Book cover titled "Dessert Course: Lessons in the Whys and Hows of Baking" by Benjamin Delwiche, featuring an overhead photograph of baking trays with labelled cookies and pastries, hands holding coloured pens, and the DK logo, set against a blue background.

DK US commissioned us to design Dessert Course: Lessons in the Whys and Hows of Baking by Benjamin Delwiche. More than a recipe book, it teaches how ingredient choices and technique affect outcomes — using flow charts, method breakdowns, and variation exercises to make baking experimental, clear, and fun.

Our role

We designed the cover and internal layouts, creating a structured system that supports flow charts, method breakdowns, and recipe variation trails. The cover and interiors were conceived to be stylish yet functional, punchy enough for a cookbook while clear enough for scientific content.

Blending clarity with creativity

Layouts combine clean typography with the science of the baking process. Each spread allows space for method explanation, recipe steps, and variation routes, letting readers follow the logic behind each bake without feeling overwhelmed.

Impact

Dessert Course has been praised for its clarity and design. Cookbook Review highlighted how the book “decodes the science behind each stage in a recipe,” while Amazon readers describe it as “beautifully laid out and super clear.” Together, the response positions the book as both a practical guide and a teaching tool for bakers who want to master the “whys” as well as the “hows.”
